Goat Cheese & Mushrooms on Ciabatta

250gms chopped mushrooms
2 chopped Roma tomatoes
1-2 tablespoon Olive Oil
1 tablespoon of chopped parsley or coriander (or both)
2 tablespoons of Leaning Oak St Maures Goat Cheese
A good drizzle Noble House Balsamic Vinegar
Loaf of Chabata Bread

Method

Toast 2 or 3 thick slices of Ciabatta bread (alternatively Vienna or sourdough)

Pour oil into frying pan. Stir fry tomatoes and mushrooms in pan for 3-5 minutes or until soft, Add cheese, herbs and vinegar to pan and stir for 1-2 minutes until mixed. Season to taste and serve mixture on toast. Garnish with extra herbs and a dollop of cheese.
