Spaghetti with Smoked Trout and Lemon/Lime Marinated Feta
350g dried spaghetti
4 tomatoes, chopped
100g baby rocket
220g smoked salmon or trout, chopped
120g Leaning Oak Marinated Feta with Lemon/Lime
Chopped Coriander to serve
Cook pasta in a saucepan of boiling, salted water, following packet directions, until tender. Drain, reserving 2 tablespoons cooking liquid. Return pasta to pan.
Add reserved cooking liquid, tomato, rocket and salmon/trout to pasta.
Pour 120g of Leaning Oak Marinated Feta with Lemon/Lime into a small bowl (include 2 tablespoons of the marinade oil) crumble feta using a fork and mix in mix into the pasta. Season with salt
Cook, tossing, over low heat for 1 to 2 minutes or until heated through and rocket just starts to wilt. Serve with Coriander sprinkled on top.
