Baa Baa Blue & Walnut Fingers

170g Baa Baa Blue cheese crumbled
140g (1/2 cup) Leaning Oak Fresh Sheep Curd
1 tbs chopped fresh Continental parsley
1 tbs thinly sliced green shallots
2 tbs coarsely chopped walnuts
2 sheets (24 x 24cm) frozen puff pastry


Preheat oven to 200°C.

Meanwhile, combine Baa Baa Blue cheese, Leaning oak Fresh Sheep curd, parsley, green shallots and walnuts in a bowl and mix well with a fork.

Remove pastry from the freezer and place on a work bench. Use a sharp knife to cut each sheet into 16 even fingers. Place the pastry fingers

on the prepared tray and prick the surface of each all over with a fork. Spread the cheese topping evenly over the pastry fingers.

Bake in preheated oven for 15 minutes or until the pastry is golden and puffed. Serve warm.

These fingers are ideal to serve with pre-dinner drinks, They are also delicious served as an entree accompanied by a green salad with pear slices or as part of a picnic menu.
